Italian Wedding Soup

Try this flavourful and delicious soup recipe that we have tweaked and changed a little to make it more healthy for you. This delicious soup consists of a chicken broth base (store bought or home made), ground chicken meat balls, a good amount of vegetables and greens, and parmesan cheese! We recommend purchasing organic chicken broth, organic ground chicken, and organic vegetables.

Ingredients for Meat Balls:

  • 2 Pounds of Organic Ground Chicken
  • 1 Small Onion-Chopped
  • One Small Clove of Garlic- Minced
  • 3 Table Spoons of Greater Parmesan Cheese
  • 3 Table Spoons of Milk
  • 4 Table Spoons of Chopped Parsley
  • 1 Egg
  • Salt and Pepper

Combine the ingredients and mix well. Make the meatballs and begin making the rest of the soup.

Ingredients for the Soup:

  • 500 mL of Organic Chicken Broth
  • 2 Large Carrots-Chopped
  • 2 Sticks of Celery- Chopped
  • One Small Clove of Garlic- Chopped
  • Half an Onion- Chopped Very Finely
  • 3 Table Spoons of Olive Oil
  • 200 gr of Orzo – Slightly Cooked (Al Dente)
  • Baby Spinach- 2 x Hand Full
  • 2 Table Spoons of Greater Parmesan Cheese
  • Salt and Pepper

1. Pour the chicken broth in a large pot and let it get warm.

2. Add the carrots, celery, olive oil, onions, and garlic in a heated pan and saute slightly browned.

3. Add the pre-made meatballs to the chicken broth.

4. Add the sauteed vegetables to the broth.

5. Add salt and pepper to taste and let it cook for 10 minutes on medium heat.

6. Add the slightly cooked orzo and let it cook for another 5 minutes.

7. Allow the soup to come to a boil and add the spinach and parmesan cheese, and turn the heat off. 9. Let the soup sit for 10 minutes and enjoy!

Serves 4-6 people.
