Healthy Grilled Chicken Burritos

Spring has sprung and it’s time to bust out those delicious, for-the-grill recipes that everyone loves! Make everyone’s night by serving this flavourful and delicious chicken burrito recipe with whole wheat tortillas, guacamole, sour cream, lettuce, grilled peppers, and grated cheddar/mozzarella cheese.

Ingredients for Marinating the Chicken:

• 1kg of skinless, boneless chicken thighs

• half a bunch of cilantro

• 2 table spoons of cumin

• 1 table spoon of salt

• 1 table spoon of black pepper

• half a cup of olive oil

• juice of 3 limes

• zest of half a lime

• 2 cloves of minced garlic

Ingredients for making Burritos:

• whole wheat tortillas

• chopped lettuce

• roasted/grilled peppers

• grated cheddar/mozzarella cheese

• sour cream

Instructions for Burritos:

1. Place the dry ingredients, olive oil, and cilantro in a blender or food processor and blend until all ingredients are well incorporated. 2. Place the chicken thighs in a large zip bag and add the marinade on top. 3. Spread the marinade evenly across the chicken, and allow to chill for up to one hour. 4. Grill the marinated chicken and sliced peppers on the BBQ. 5. Heat up the whole wheat tortillas in a microwave or oven. 6. Cut the grilled chicken into small thin slices, place a few pieces on a warm tortilla, add lettuce, guacamole, sour cream, grated cheese, grilled pepper slices and enjoy!


Ingredients for Guacamole

• 3 Avocados

• 1/4 a cup of cilantro

• 2 small tomatoes chopped

• * 1 medium sized clove of minced garlic or 1/2 red onion finely chopped (optional)

• juice of 2 limes

• Salt to taste- usually 1-2 tea spoons

• 2 Table spoons of olive oil

Instructions for Guacamole:

1. peele the avocados, and take the seeds out. 2. place the avocados in a food processor or a blender, add the lime juice, olive oil, salt, minced garlic OR red finely chipped onion. 3. place the blended avocados in a bowl and add the chopped tomatoes, and chopped cilantro. 4. add more lime or salt to taste if needed, mix well using a table spoon and serve.
